Ingredients
  

  • Crust:
  • 1 cup almond flour or whole oat flour
  • 2 tablespoons melted coconut oil
  • 1 tablespoon honey or maple syrup
  • Filling:
  • 1 cup cottage cheese
  • 1 cup Greek yogurt
  • 2-3 tablespoons honey or maple syrup to taste
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions
 

  • Prepare the Crust:
  • Preheat the oven to 350°F (175°C).
  • Mix almond flour, melted coconut oil, and honey/maple syrup in a bowl.
  • Press the mixture evenly into the bottom of a 9-inch springform pan.
  • Bake for 10 minutes or until golden brown. Let it cool completely.
  • Prepare the Filling:
  • In a large bowl, combine cottage cheese, Greek yogurt, honey/maple syrup, vanilla extract, and salt.
  • Blend with an electric mixer until smooth and creamy.
  • Assemble and Bake:
  • Pour the filling over the cooled crust and spread evenly.
  • Bake in a preheated oven for 45-60 minutes, or until the center is slightly jiggly.
  • Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

  • You can customize the crust by adding crushed nuts or oats for extra texture.
